Bruschetta with lobster and green apple

Ingredients for 4-6 people:
1 lobster
1 large loaf of bread
A few small tomatoes (preferably datterino)
1 green apple
1 fresh spring onion
Valerian lettuce leaves
Mullet botargo
Mixed herbs
Extra virgin olive oil
Salt and pepper to taste.

Cut the bread into thin slices, possibly with the help of a slicer. Bake for 5 minutes in an oven at 200°C (390°F) until it becomes crisp.
Cook the lobster in boiling water for about 15 minutes. With the help of a knife, extract the pulp from the shell and cut it into long diagonal pieces.
Cut the spring onion and the green apple into thin slices. Peel the tomatoes and cut them in half.
Compose the dish by placing the slice of bread on a plate with the lobster pieces, the onion and the bottarga on top. Garnish with a few valerian leaves, tomatoes, green apple slices and mixed herbs. Add a drizzle of olive oil, and adjust salt and pepper to taste. Serve immediately.
