Marinated salmon with lentil sprouts

Ingredients for 4 people:
600 g fresh salmon
300 g lentil sprouts
20 Chinese mandarins (Kumquat)
Extra virgin olive oil
Salt and pepper

For marinating:
200 g coarse salt
100 g raw cane sugar
Wild fennel seeds
Fennel tops (fine leaves)
Orange peel
Lemon peel
Star anise
Black peppercorns
100 ml brandy

Clean the salmon by removing the bones and scales. Place it in a baking dish or pan. Marinate it with all the ingredients specified for marinating, except the brandy. Cover the salmon and its marinade with a cloth and sprinkle with brandy. Leave to rest at room temperature for at least 4 hours.
Arrange the sprouts on a plate dressed with oil, salt and pepper. Add the Chinese mandarins washed and cut into 4 parts each.
Remove the salmon from the marinade, wash it in cold water and dry it. Arrange it on a plate and decorate as desired, adding a drizzle of olive oil.
